Grilled golden pumpkin rings with 3 toppings

Ingredients for about 6 rings:

 

  • 1 butternut squash
  • Neutral vegetable oil (such as sunflower or peanut oil)
  • Pepper and salt
  • Optional: get fancy with cayenne pepper, curry or smoked paprika.

 

 

For the sun-dried tomato and olives topping:

1 tub of WildWestLand Garlic & Herb affair

1 tbsp sun-dried tomatoes, chopped

1 tbsp black olive slices

Some basil leaves, chopped

½ tbsp roasted pumpkin seeds

 

For the avocado and corn topping:

1 tub of WildWestLand Garlic & Herb affair

½ an avocado in cubes

1 tbsp corn

4 cherry tomatoes, quartered

chili flakes

1 tbsp coriander, chopped

 

For the apple and curry topping:
1 tub of WildWestLand Garlic & Herb affair

¼ apple in small cubes

1 spring onion in rings

1 tsp curry powder

½ tbsp vegan mayonnaise

 

Preparation of the pumpkin:

Preheat the oven to 180°C.

 

Cut the pumpkin into equal slices about 1 centimeter thick. Remove the seeds and press a circle from the center with something round, like a stud ring or a small glass. Keep any leftover pulp for a cake, soup or stew.
Brush the tops of the rings with oil and sprinkle with some salt and spices to taste.

Place the pumpkin rings on a baking tray with baking paper in the middle of the oven and roast for about 15 minutes.

Let cool to lukewarm/warm before continuing with… the toppings!

 

Sun-dried tomato and olives topping:

Mix all ingredients except the pumpkin seeds together and season with salt and pepper. Cover the grilled pumpkin rings with Garlic & Herb Affair and divide the tomato mixture over them. Sprinkle with pumpkin seeds at the last minute as the ultimate pumpkin-y garnish.

 

Avocado and corn topping:

Cover the grilled pumpkin rings with Garlic & Herb Affair. Toss the avocado and corn together and top the rings with it. Place the tomatoes on top and sprinkle with chili flakes and coriander. Or stay away from the coriander if you have haters among your guests. It happens.

 

Apple and curry topping:

Cover the grilled pumpkin rings with Garlic & Herb Affair.
Stir the apple cubes, spring onion, curry and mayonnaise together and season with salt and pepper. Spread the apple mixture over the pumpkin. Sprinkle with some reserved spring onion. Crazy good.
