Peanut Coconut Bar

These Peanut Coconut Bars will make a great snack, but are also a great addition to your dessert platter. What else could you need? And easy-peasy lemon-squeezy to make. I’ll tell you how!

Ingredients:
120 gr WildWestLand Cream Passionel
100 gr grated coconut
200 gr peanuts (or peanutbutter without any additions)
1 tsp fresh ginger
1 tsp miso
70 gr maple syrup
Zest of ½ lime
Pinch of salt

Preparation:

Blend the peanuts until it’s a creamy mixture. Store-bought peanutbutter is fine, too. If that’s what you did, kudos to you for cheating the system! Mix the peanutbutter with the rest of the ingredients. Line a bowl of 10 by 20 cm with cling foil and fill it with the mixture. Let it stiffen in the fridge for at least 2 hours. Now you can cut it into cubes, bars, cats, cows, whatever shape your little heart desires! If you’re feeling extra festive, dip the bars into chocolate or whatever sweet, gooey concoction you have left over from other dessert recipes. Dig in!
