Cowgirl pizza with spring veggies

Getting your greens while eating pizza is now made possible. 🍕 And it looks cool as anything I’ve ever seen, so it’s a win-win-win. 😎

Makes 4 in only 15 minutes. That doesn’t necessarily mean you’ll serve 4 people. It should be enough, but they are too good to not stuff yourself with.

 

Ingredients:

1 tub WildWestLand Cream Passionel Sweet Pepper

4 (vegetable) tortillas

1 bag of lettuce

2 spring onions, sliced into rings

100 gr snow peas (peultjes), blanched

80 gr broad beans (tuinbonen), boiled and with the ends cut off

80 gr peas, blanched

½ zucchini, sliced into thin strips

2 tbsp fresh mint, chopped

2 tbsp fresh parsley, chopped

2 tbsp pistachio nuts, chopped

Juice and zest from one lime

Olive oil

Salt and pepper

Optional: edible flowers from your own garden like pansies, daisies or forget-me-nots

 

Preparation

Do you have that good mise en place thing going on? Then you’re basically done with this dish. All you have to do is let your inner artist do the decorating. 🎨 Spread a generous layer of WildWestland Cream Passionel Sweet Pepper on the tortilla and go nuts with the vegetables, herbs, chopped nuts and lemon zest. Some drops of lime juice will be the perfect finishing touch. Add salt and pepper to taste and your edible spring painting is finished! 🌱🍕
